 Château Rives-Blanques
AOP Limoux is the only white wine appellation in France requiring fermentation and maturation in oak barrels. It also decrees that the grapes must be picked by hand. The famous Roman historian Titus Livius was already extolling Limoux's "wines of light" two thousand years ago (quoted on the label of Cuvée de l'Odyssée), and we are proud today to present the appellation's first-ever trilogy of three wines of light made from the three permitted grape varieties: a chardonnay, a chenin blanc, and a mauzac - wines that reflect the full potential of the appellation, and glow as if the sunshine were still in them. A fourth wine, La Trilogie is the 'true Limoux': an exclusive blend of the best barrels of these three grape varieties.
Rives-Blanques Blanc de Blancs (#35-28)

Rives-Blanques Blanc de Blancs is a chardonnay-based mouthful of pure pleasure. A second fermentation in the bottle is followed by at least two years on the lees. Elegant, fresh and zingy, this wine is sure proof why Limoux has been so famous for its fizz ever since medieval times.

Rives-Blanques Blanquette de Limoux Sparkling 2015 (#35-27)
The world's oldest sparkler is still made to this very day only in Limoux, under the strictest AOP rules. It has the lowest permitted maximum yield of any sparkling wine in France, and is made exclusively from hand-harvested grapes. Whole, unblemished grapes are pressed within two hours of harvesting. Each grape variety is vinified separately and fermented at 14 °C. in stainless steel vats with a second fermentation in the bottle. Yield: 45 hl/ha.
Grapes: 90% Mauzac, 10% Chardonnay/Chenin Blanc

Rives-Blanques Cremant Sparkling Rosé '15 (#35-26)
Limoux has an enviable reputation for the quality of its sparkling wines: as far back to the 16th century. The latest newcomer to the region is Crémant de Limoux, which like Champagne, is based largely on Chardonnay.  This sparkling rosé is fresh in the mouth and on the nose with hints of raspberry & strawberry.  Delicate, dry and elegant with fine bubbles.

Rives-Blanques Lagremas d’Aur 2006 (#35-13) Dessert Wine

Lagremas d'Aur means 'Tears of Gold' in Occitan, the ancient language of Languedoc.  This is s sweetie from Rives-Blanques, a truly delicious, delectable "curiosity" of their range. Made from chenin blanc harvested in October 2006 and mauzac harvested in November 2006, the grapes were picked at exactly the point where their naturally concentrated sugars were perfectly balanced by natural freshness. 

Because the Limoux appellation does not allow for naturally sweet wines made from these grape varieties, “Lagremas d'Aur" has to be labelled as a “Vin de France”, the lowest category in the pecking order of French wines. It was fermented and aged for three years in seasoned French oak barrels, and then aged another year in the bottle.

Rives-Blanques Le Limoux 2014 (#35-19)

Le Limoux is the classic Limoux blend of Chardonnay, Chenin Blanc and Mauzac.  This wine expresses hints of apple, pear, peach, citrus, and possibly a bit of banana.  Picked and sorted by hand the wine is fermented in oak barrels.  

Grapes: 40% Chardonnay, 40% Chenin Blanc, 20% Mauzac

Elegant, complex, intellectually challenging and sophisticated, yet startlingly simple in its clarity.  Every year presents a new challenge, the aim being to get the best out of each vintage.  Yield between 35-45 hl/ha. Each grape variety vinified separately. Grapes picked and twice-sorted by hand, pressed within two hours of harvesting. Fermented and aged in French oak barrels for six months.

Grapes:  50% Mauzac, 25% Chardonnay, 25% Chenin Blanc
