Languedoc The Languedoc-Roussillon area is one of the largest expanses of vine-growing areas in the world and stretches for 120 miles along the Mediterranean coast. There are approximately 750,000 acres (300,000 hectares) of southern France included in the Languedoc, from the Rhône River to the Spanish border and the Pyr‚n‚es and producing one-third of all French wine. The area produces mainly full- and medium-bodied red wines, light and dry ros‚s and an assortment of dry, sweet and sparkling white wines. The principal grapes are the Carignan, Grenache, Mourvèdre, Cinsault and Syrah. Most of the wines are "Vin de Pays", country wines, and are perfect as "everyday" wines.

Grapes are harvested at night to preserve freshness. They are destemmed before a short skin contact or a direct pressing. Fermentation temperature is maintained between 59°F to 64°F to retain fruit aromas. Light pink colour. Red berries and peach flavors with spicy overtones. Elegant wine combining roundness and freshness. To be drunk young.

Rives-Blanques Blanc de Blancs is a chardonnay-based mouthful of pure pleasure. A second fermentation in the bottle is followed by at least two years on the lees. Elegant, fresh and zingy, this wine is sure proof why Limoux has been so famous for its fizz ever since medieval times.

Rives-Blanques Blanquette de Limoux Sparkling 2015 (#35-27)

The world's oldest sparkler is still made to this very day only in Limoux, under the strictest AOP rules. It has the lowest permitted maximum yield of any sparkling wine in France, and is made exclusively from hand-harvested grapes. Whole, unblemished grapes are pressed within two hours of harvesting. Each grape variety is vinified separately and fermented at 14 °C. in stainless steel vats with a second fermentation in the bottle. Yield: 45 hl/ha.

Limoux has an enviable reputation for the quality of its sparkling wines: as far back to the 16th century. The latest newcomer to the region is Crémant de Limoux, which like Champagne, is based largely on Chardonnay.  This sparkling rosé is fresh in the mouth and on the nose with hints of raspberry & strawberry.  Delicate, dry and elegant with fine bubbles.

Rives-Blanques Dédicace Blanc 2017 (#35-30)

An exceptional wine especially in a region not known for its chenin blanc. Dédicace has been made with great dedication from 35 year old vines. It is a "modern style of wine" made with all the care and experience that is rooted deep in tradition.  Possibly the only chenin blanc with appellation status in the whole of the South of France, it has distinguished itself as one of the most interesting white wines of the region.  Whole, unblemished grapes harvested by hand and then individually sorted again by hand before pressing; pressed within two hours of harvesting. Fermented and matured for six months in 8% new French oak barrels. Yield: 40 hl/ha.

Rives-Blanques Occitania Blanc 2017 (#35-29)

Made from 100% Mauzac, a grape grown in this region dating back to the Renaissance, the harvest is pressed within two hours of picking. The wine is matured for six months in seasoned French oak barrels.  Awarded 4 stars by the British magazine Decanter, Occitania has been rated one of the top wines in France for each of the last four years.

Vordy-Mayrannes 'Cuvee Louise' 2016 (#18-46)

A spicy nose with reminders of moist turf. This full bodied red wine has loads of character to be unleashed after decanting for an hour or so.  Given the blend, it is not surprising to find tannins in evidence, hence the need to decant for utmost enjoyment.  Drink now and over the next six years.

 ‘Cuvée des René’ is a medium to full-bodied red with aromas of raspberries and cherries. The flavors include dark chocolate, cooked cherries and other dark fruits. This is a complex, well-structured, smooth finishing wine. Certified organic.

The Domaine Vordy-Mayrannes ‘Cuvee Francoise’ has a rich and complex nose with the aromas of black cherries, nutmeg and chocolate.  These are repeated in the flavor of the wine along with a silky finish with just a soft hint of the tannins at the end. Certified organic.
