Provence

Provence (Provençal) wine comes from the French wine-producing region of Provence in southeast France. The Romans called the area provincia nostra ("our province"), giving the region its name. Just south of the Alps, it was the first Roman province outside Italy.

Wine has been made in this region for at least 2,600 years, ever since the ancient Greeks founded the city ofMarseille in 600 BC. Throughout the region's history, viticulture and winemaking have been influenced by the cultures that have been present in Provence, which include the Ancient GreeksRomansGaulsCatalans andSavoyards. These diverse groups introduced a large variety of grapes to the region, including grape varieties ofGreek and Roman origin as well as SpanishItalian and traditional French wine grapes.

Today the region is known predominantly for its rosé wine, though wine critics such as Tom Stevenson believe that region's best wines are the spicy, full-flavoured red wines. Rosé wine currently accounts for more than half of the production of Provençal wine, with red wine accounting for about a third of the region's production. White wine is also produced in small quantities throughout the region with the Appellation d'origine contrôlée (AOC) region of Cassis specializing in white wine production. The Côtes de Provence is the largest AOC followed by the Coteaux d'Aix-en-Provence. The Bandol region near Toulon is one of the more internationally recognized Provençal wine regions.

Direct pressing and cold settling. Winemaking in vats with a piece of wood, a traditional method, slow fermentation. The 2015 vintage has a beautiful and clean freshness, with some minerality! The nose has light aromas of white, dried fruits, then a green freshness of lime and fennel. Fruity flavors round it all off slightly and give it an overall beautifully gourmand note. Elegance and a lot of balance!

Pibarnon Nuances Rosé 2015 (#58-14)

Production is quite small as this is an exceptional rosé. The best soils are chosen with Bandol yields of less than 35 hl /ha. Natural yeasts are used and a good quality wine-­making temperature of 21/23°C (70-74F) is used to extract aromas of the grape variety. Wine is bottled in late April. This is a classic Pibarnon rosé that may be enjoyed this year and for years to come.

The grapes are put into tanks by gravity without using any pumps in order to keep the grapes intact. Traditional vinification is in stainless steel tanks with total de-stemming and daily punching over of the cap for better extraction of aroma and fine tannins from the grape skins. Long fermentation (25 days) with ageing for 18 months. One part goes into large new oak casks from the "massif central” in France and Austria (Stockinger), and another part goes into small oak barrels.

The Cinsault is pressed directly. It brings fat and fruit to the blend. The saignée method (drop of juice) and pressing is used on the Mourvèdre. It gives a good structure, freshness and complexity. The two varieties are blended before fermentation. Long fermentation (25/30 days) in stainless steel vats. Controlled temperature at an average of 22 °C. Aged in vats for 6 months to preserve the freshness of the aromas. Some notes of citrus but also ripe fruits explode before revealing licorice, ever-present thanks to Mourvèdre. A mouth full of freshness and body, amplified by the sap and fruit, viscosity and spices.

In bottles since the summer of 2013, it gives a lot of seduction with much density, softness, but always with this famous Mourvedre's character!

Bagnard is the top red cuvée of Château Les Valentines red wines. The blend comes from a selection of old vines and is aged from 12 to 18 months in demi-muids (600 liter barrels). Cool coastal breezes which help to moderate the hot summers contribute to the lovely fruit flavors and palate cleansing acidity that this wine has to offer.  Full bodied and complex with concentrated black and red fruits, hints of cacao, espresso and cake. A hearty red that will be the perfect winter warmer. The nose is powerful and complex, the mouth is spicy, velvety and explosive.

Over 3,000 hours of sunlight during the growing season ripens this highly sought after red, coming from a world class terroir, mostly crafted from one single grape variety.  Carignan is one of the oldest cepages grown in Provence. It provides cherry-peppered and fruity authentic red wines.The delicate aromas of garrigue (Provence scrubland) leap from the glass and displays a lovely roasted provencal herbs nose as well as supple and mouth coating, full rich flavors of berry, cassis and blackberry.

This wine is a pale salmon color with a fresh nose exhibiting notes of cranberry, anise and fennel.  It is round and full-bodied in the mouth with a long and spicy finish.
